I had the same issue. Here's how I fixed it:
1.) Go to whichever drive Apex is installed on
2.) Find the "Origin Games" folder
3.) Inside that you should find a folder named "Apex", click on that
4.) In the Apex folder you should find another folder named "EasyAntiCheat", go there
5.) Open EasyAntiCheatSetup
6.) Click Uninstall
7.) Click Install
8.) Restart computer
9.) Open Apex Legends
Hopefully that should work!

I did the first 5 steps of what @Origamimaster81 said to do, but when I opened the EasyAntiCheatSetup it had a repair button so I clicked that.
It reinstalled itself with Apex Legends and I didnt have to reboot pc or anything just started it straight after without issue
