So I seem to have fixed this issue for me. I had to increase the amount of virtual memory my computer used for the drive Apex was installed on. I followed the instructions found here:

I had to set it pretty high; minimum 15000 MB, maximum 30000 MB

Have not had the issue since. Hope it helps someone else.

I hope someone can look at this because I feel 19 - 20 GB of virtual memory usage is way too high.
