Progress is stored on the EA account level, not on individual platforms like PlayStation, Xbox, Steam, etc. This means if you link your platform to a different EA account, you'll lose access to that progress.

In addition to this, each EA account can only have a single account from each other platform linked over its lifetime.

That would mean in this situation, even if you unlink your Steam account, you won't be able to then link a different Steam account to the same EA account unfortunately.
