Your stuff wasn't there because your game progress and data doesn't transfer over from one EA account to another when you unlink a connected account from one and link it to another. Here's what it shares in our EA Help article: "Unlink your platform accounts from your EA Account":

So, according to that guide, you'll need to wait 6 months before you'll get the option to unlink from the current EA account and relink to the original one to try to restore the game progress.
In terms of the bugging out, that can happen if you unlink a platform from an EA account that you play Apex on. In the same EA Help article, it shares this:

Instead of unlinking and relinking a platform account you play Apex on, it may be better to start fresh on a new account.
