Would I be okay relinking Apex account to main EA account?
I have two EA accounts: One on a Yahoo email address and the other on a Gmail. I used the Yahoo email address to create my Xbox account years ago. When I first started Apex, it used the Yahoo account. Years later after upgrading my PC, I created an EA account using Gmail to purchase and play games like the Sims games series. It was then I realized I could play Apex on PC. When I first ran Apex on PC through the Steam software program, it created an Apex account using the Gmail address. I believe unlinking the Xbox account from the EA account settings would lose all the contents earned in that Apex account. For my situation, I wish to bring my Apex account from my Xbox to the Gmail account. Would it still be okay to unlink and relink from the Yahoo one to the Gmail?
My Xbox account is the main Apex profile I put more time into that than the one on PC but my Gmail account is also my primary account for playing and purchasing any other games. I want to put my Apex content from the Xbox to be under my Gmail so that it'll be easier to manage and keep track of all my games. I did not unlink either of the accounts before the cross-progression wave and waited cause I didn't want to risk losing content after hearing about other people who have done so. I barely put time on the PC one and don't care for that content to be lost but I wish to relink the account from Yahoo to Gmail along with the contents I earned.

A few things about your question based on the information you shared. Progress and Platform accounts are different things, so your accounts would look something like this:
EA Account 1 (Yahoo): Xbox Progress, Xbox Account
EA Account 2 (Gmail): PC Progress, PC Account, Switch Progress, Switch Account
First, Items and Progress are stored at the EA account level, not the platform account. With the Cross-Progression merges in Apex Legends, we take the "Progress" of each platform and merge it (for all eligible items and progress) so that it tracks under the EA account once, keeping in mind certain items like Stats and Rank will always be separate.
So, if you decide you want to move your Xbox (from the Yahoo EA account) and have it linked to the Gmail EA account (with PC and Switch) you will lose the items and progress on that platform as they would stay on the EA account.
This is useful if you want to have all Platform Accounts on one EA account to use with Cross Progression, but does mean you won't bring over your Xbox items and progress.
However, if you want to keep your items and progress the Xbox account would need to stay linked to its original EA account, but this does mean you won't be able to use the account with cross-progression (for those other accounts).
