Can't change email or Unlink Xbox Account

I made this EA account back in 2017 with the help of my sister on Xbox, I never or rarely log in to this account on a PC until I wanted to update the name of this account back in 2023. I couldn't access the settings because it was asking me to verify the email that was attached with is account but, the email was deleted. I asked for help and they said I need to "verify that I own the account" with questions. Because this account was made 6 years ago at that time I didn't remember a lot of the information so they couldn't help me, so I gave up because I played mostly single player games or offline modes like NHL 18/19.

Now I play more multiplayer games and want to change the name to match my Xbox name, or close to my Xbox name. I want to know if there is a way to change the email and update the information, or just be able to unlink the Xbox account. Maybe something like "Is this still your email?"  notification when I log in or if I can verify through Microsoft or on Xbox some how.

Somehow I would like the name change.
