I'm trying to unlink my Nintendo account but this option is not showing in the account link section of my ea account site.
When I look this up online get linked to the support chat.
When I click those links I get sent to a place that explains how to open the chat, but no actual option to do so.
Can anyone help me out?

If you don't see it linked under your connections, then there isn't a Nintendo account linked. Are you not able to relink your Nintendo account elsewhere now? Or what's the exact issue?
Im trying to link my current email adres to Burnout Paradise, and when I do that it sends a confirmation code to that email adres, but once i type it in, it says that email is already linked to a different ea account. But when looking in my connected accounts Nintendo is not even part of that list

I could be wrong, but it sounds like you might possibly have two EA accounts. Could you have set up another one at some point in the past?
The issue is that I removed my old Nintendo account and refused the old email address. So when I now enter a new game with that email address is sees that it's already in use but through a different old Nintendo profile.
So it's just confused to see two of the same email addresses in two different Nintendo accounts.
But via the EA account website there's no way to dislodge the Nintendo account.
