I am having exactly the same issues that you’re describing but on ps5 in online games. My players are acting very odd, run off pitch, unresponsive etc etc. it’s ruined the game for me and my confidence in playing.
Have you heard of others with the same issues?
Yes there seems to be many with the same, or similar issues across each platform but I'm yet to find a solution that fixes or improves my situation at all.
Others seem to have success with some solutions as I've described the settings changes in my post but not for me unfortunately.
I'm currently testing whether my controller is the issue as I've only tried Xbox 360 pads.
