Fullscreen  the game controls the colors , in window borderless your desktop settings control them

if nvidia have a play with adjust desktop color settings for example and see if it changes 

if you have a hdr monitor try turning of hdr in wondows etc 

edit also update video drivers etc in case its a bug on the version you have
