My dooku, (gl9 lvl 73) solo'd chaze combo (gl9, 75) under a nihilis lead after boba, rey,Vader killed everyone else. It took 5 minutes, but my dooku won the fight 2 v 1.
I think a sith set up is more deadly, but I can see your frustration in how efficiently these guys play off each other.
Dooku is a pain in the ass in the later game, but honestly he's so vulnerable to massed attacks/debuffs he can't stand up in the later levels. One stun and he's done.
