But with the sim, it changes nothing for anyone who doesnt want it. That is why it was weird to remove that and add the sim around the same time.
Either way it's not going to happen.
I mean, if I could just keep simming, sure. We all know that *if* it were to happen (like you said, it won't) then they'd remove the sim option for the harder mode.

No individual content has had the sim added and taken away the ability to also play it, or vise versa
There's so many "they've never done this before" things that still ended up happening.
There sure are, but there is also a very long list of things they could take away, that they just won't. The availability of SIM on an individual event is one of them.
