You won't be able to SIM it until the update is pushed to everyone later today, about 15 hours away if it is at the usual time.

Yes, you may have updated through the Apple/Play store but stuff needs to be activated/pushed from the server side.

Unlikely you will SIM today, depending on timezone, but you definitely should be able to tomorrow if the update goes as planned.
