Unfortunately once a career path is chosen, it is permanent.
For the aspirations, if you haven't chosen already, you should go for mixology. The mixology aspiration requires this branch but the masterchef aspiration does not specify a branch in the culinary career. You can complete it as a chef or a mixologist. Not having to choose seems a bit odd but I think that was an intended work around because we can't switch. I completed both aspirations with the same sim by choosing the mixology career.
If you use mods you can use mccc to reset the career track
If you own discover university you can get the degree for the chef branch of the culinary career and get into that career track mod free.
