While this site does have its own bug forum, EA employees appear to be much more active over there, so you'll get more attention than on this site, at least at the moment. I don't see a related bug report there either, so you might be the first one to notice.
Is it a bug, though? I'll gladly report it to the forum, though.
I've done some testing, and this is what I've found out for anyone interested or having the same issue. There are spoilers:
Levels 1-4 of the Undertaker branch require Thanatology skill to unlock the hidden option, and this leads to a message about Jon Smith Tricou. Level 5 of the Mortician branch (I would surmise the same for Funeral Director) requires the Jon Smith option to have been unlocked first. Level 7 is unrelated to the quest but also requires Thanatology skill. At level 8, your sim can receive the "Move Plots" option only if the interactions from level 5-6 and Levels 1-4 have been previously unlocked.
As for hired mourners... they seem to only be a pool of sims you do not have in your relationship tab, and are directly tied to the neighborhood where you plan your funeral and NOT where you intend to host your funeral. It's an odd mechanic, especially since you can sort hired mourners by friendship or relationship status; both of which nullify the hidden requirement to be considered a hired mourner.
So I've done some more digging, and what I unearthed was that the Tricou lore options directly correlate to hidden traits that can only be unlocked if the previous choice was selected. So it goes something like this:
Thanatology skill > Hidden trait 1 > Hidden Trait 2 > Hidden Trait 3
For levels 1-4 of the Undertaker career, the hidden trait unlocked from the thanatology skill option is called:
trait.hidden_mortician_grave
For levels 5-6 of both the Mortician and Funeral Director Careers the hidden trait is called:
trait.hidden_mortician_ghouls
And for levels 8-10 the hidden trait is called:
trait.hidden_mortician_grave2
** Also, once the Tricou option has been selected at level(s) 8-10, the final plot point in the story is unlocked, and your Sim loses the hidden trait, so they cannot re-select it on another day at work.
