I have quite a few clubs in game, mostly to get people to venues and doing stuff that I want done or to make the game feel more natural, so I have clubs that none of my own sims are in too. A few of the ones I have:
For non-active sims or sims I play less often:

I also read someone on the forum who used clubs for the kids to come over (his sim was a dad but the kids lived with mum) - and personally I think that sounds like a great idea. Easy way to get "split custody". Also if you play a kid that has divorced (or never married) parents to spend time with your other parent and stay there for a while, or kids spending time with grand parents...
For non-active sims or sims I play less often:
- Various kids' clubs that hang out at parks and play at playground equipment, swim (I usually put pools in my parks) and socialise with each other.
- Hate children's club made up by adults who hates children, they hang out in parks and are mean to kids.
- Swimmers clubs that hang out in parks and swim, work out and generally spend time around the pools.
- Support group of moody sims that hang out at cafés, drink coffee and complain about things
- Art appreciation society of rich art lovers who hangs out at the museum, looks at art and are social
- Artists who hangs out at museums and paint
- Art thieves who hang out at museums and try to steal things and are mean to the agents
- The agents (career based) who hang out at museums and fight art thieves (my museums has a lot going on)
- The book club who hangs out in libraries and talk about books
- The beach buddies who hangs out at beaches and do conservation work, beach comb
- Various singles groups who hangs out in bars and night clubs and try to be romantic to other sims
For my active sims:
- Couples groups for each of my played couples, so that they spend time and romance each other even when I'm not playing them and keep their relationship strong.
- Family groups for extended families I play - so grandparents, parents, kids, siblings, partners... (if you play generational you need cheats for this to work, my current family group is 24 people strong and growing, but this way it's easy keeping them connected and holidays are a piece of cake).
- Work guilds (Artists' guild, writers' guild...) for the jobs my sims play at the moment, so they can easily spend time with their colleagues.
- Hobby groups for people who share an interest
