@CaptainElsa Here is a chart taken from Carl's Sims 4 Plant Guide for all the Herbs available for harvest showing their rarity, in what season they grow, base value, how many hours it takes the plant to mature to first bloom, and their location in Granite Falls. Hope it helps!

EDIT:
The longest it takes for an herb to mature is 24 hrs. All mature plants bloom for harvest at 5 a.m. every day after the initial hours to grow has passed. That is, provided your Sim is in the area. They have to BE there at 5 a.m. For example, if your Sim arrived in Granite Falls at 10 a.m., it wouldn't mature until 10 a.m. the next day which would be too late to harvest that day, you'd need to wait until the next day at 5 a.m. before it would produce anything. The least amount of time I would spend in Granite Falls when harvesting for just the plants is 3 days.
Now, for the herbalism skill, you'll also need the insects for most of the recipes as well and those could take even longer to find. I would spend at least a week in Granite Falls in order to find all the ingredients needed. This all pertains to new gardeners. If your gardener Sim is at Level 5, they will have the option to take a cutting to graft on to other plants at home instead of waiting for plants to fully mature and produce.

But, if you don't want to bother doing all that, you could also use the debug cheat and get the plants/insects that way. It's been my experience though that getting them that way doesn't always work. Sometimes the plants won't grow or won't evolve. *shrugs*
