For gigs, the clothing and hair are always a fixed setup. I'm not sure what can be done if you don't care for EA's chosen colors.
You can always not go into clothing, hair, and makeup. Choose your own clothing and hair instead.

I’m using ea hair and in the beginning I thought it was normal for it to always change to that orangey brown but I’ve seen let’s plays where that not the case. So I’m trying to figure out how or what I need to do where I’m not always getting that same color with every sim I do.

I think it depends on how the game sets a random color for you. It may orangeish brown or black but the game chooses black less often. Once set up it will apply to all your sims. It will never be blond, or at least I have not seen such a color yet. Of course, if you use mods you can enter to CAS during the show and change this color. But that could mess up the game, so it's better not to do it.

Different gigs get different hair styles and colors.
Now I've played entirely through the Acting career MANY times, on the same world and different worlds, and every time I've gotten the same hair color and style for the same gigs. I've never actually seen it change.
Like if I get the gig "Growing Up Crumplebottom", it'll always give me the same hairstyle. However that one is different than the one in the gig "Captain Sigma: Olympus Landing" which is the colorful ponytail one.
Now that being said, you can change it. There's a level 3 fame perk "Established Name" where you can skip hair and makeup and outfit tasks and just act with whatever you want with no penalties. Just go to the dressing room and pick your own outfit, hair, and makeup. That's likely what the let's play's are doing.
