QnRyche You can start moving the content you want to keep from the old Sims 4 folder to the new one. If you use mods or custom content, test those files first, but be aware that some may be broken. So you might need to spend some time testing.
Saves and Tray files generally don't break the game in the way you've described, so they're probably fine to add back, but let me know if you run into any trouble moving over the saves. Aside from that, you may want to preserve Screenshots and Recorded Videos. The rest can be discarded; the game will generate new files and folders as necessary.
