I had the same exact problem. I fixed it by going into manage world and finding the household with the random sim who replaced Edith and deleted him. Then I went back into my game and called Edith to my lot and then she went back to her place at the well. I'm assuming you'd have to have made contact with her before the issue so she's in your relationship window. But maybe you could summon her if you have mccc.
