Yeah, as @Sketch793 said, the C key is the fastest and easiest way to take screenshots. It works that way in both live and build modes. I don't think there is a way to remap any of the short cut keys in the game. You might be able to do it with another third-party app, but I don't use one so have no clue what might work.
The other way in the game to take screenshots is to use the in-game UI camera at the bottom center of the screen. Using the UI camera or the C key can give you a screenshot with or without the UI depending on how you've set it in Game Options.
And there is a third way as well but it's just using your computer's screenshot app. For windows it is: hold the Windows key and press the print screen button. If you just want a partial screenshot, its hold the Windows key, Shift S. Afterwards, you'll get the popup to save the shot. You might have to minimize the screen if you play full screen mode to save it though.
