Did you ever find a solution for this?? I am having the exact same problem and cannot find a solution anywhere.
@charlottejc2 try editing the videoconfig.txt file of apex legends.. search for it.. u can manually enter a resolution
if that doesnt work try right click properties on r5apex.exe and disable full screen optimization
