I assume you put the manny pad at the top of a quarter pipe or at an angle other than flat?

Add Ground Superdude
Simple, you're on your skateboard in the air, you press both triggers and B/circle, and you land on the skateboard while doing Superdude, which give you a hand stand position on the board.
