Log out of game//New account?

Disconnect from Game Center And create a new account

Either create new Apple ID as suggested above or create a Guest Account that is only saved on current device.

How do I create a guest account?

First, go to settings. Search for Game center.
If you're logged in with an Apple ID, means your current game is linked with this Apple ID. Just log out and enter the game, should prompt you to create a new game which will be a Guest Account.
If you are not logged in with an Apple ID, means your current game is a Guest Account. You can log in with an Apple ID and create a new account.

Cool, that worked. Thanks a ton. Is there a way to switch between the two because the new one I just started is a guest account?

No, your progress is saved on the current device. Which could be risky if you lose the current device. Create a new Apple ID and bind your Guest Account to it if you want to feel safer/transfer to another device.
