The loading screen shows jedi luke he will be released later.

The current luke is not a jedi yet.

There many versions of people based on timelines.

I don't understand why Anakin is not Sith. He should be.

For me only the Luke with green lightsaber is a Jedi

The luke that is currently in the game is the "farm boy" Luke. So its before he became a jedi, and the reason why he doesnt use a lightsaber
