@ThatCraigGirl Edit: Apologies. I should've addressed your main request before adding my suggestions. You can disable any pack, just keep in mind that this will remove all items you have used from that pack. Please see the below for how to disable packs and also pay attention to the warnings.

Also, I agree that we should just have an option to disable vampires. In Sims 3, we could choose which supernaturals to include.
Hi! I know exactly what you mean. When I first got the Vampires pack, I immediately regretted it. lol I don't want all these vampires! I actually disabled the whole pack for a while. This is the only way to disable Vampires but it also removes the rest of the pack content. Eventually, I reenabled the pack because I wanted the CAS and BB items and I just learned to live with it. I have seen some game generated NPC vampires aside from the premade Count and Vatore vampires. However, in my experience, the Count is the only one that has attacked my sims (through an overnight break in when my sims go to bed by 10 pm consistently). Otherwise, you may not even know there are other vampires in the game. You may occasionally see the bat or smoky (I forgot what it's called) travel animation but that's about it. In addition to the suggestions by @GiardiniDiMarzo and @jpkarlsen , you could go into Manage Households and just delete Count Vladislaus, if you're worried about him attacking your sims.
If you're able and willing to use mods, MC Command Center has a "humanize all vampires" option, and Twisted Mexi has a "no vampires" mod as well.
That said, I agree that the only vampire that's ever attacked any of my Sims is Vlad.
