How do I make stepping stones or islands in the middle of a pool?

The first one seems to be a ground level piece of foundation.

The second one seems to be using the Stoney Goodness Slab decorative object that came with Spa Day (for aesthetics only, not functional).

The third one is where sections of pool have been removed.
