I think it would be nice to be able to make an already made sim into a vampire or other occult sims

Simply Ask a Vampire to turn you. Same for Werewolves.
For other occult Sims. To become a Spellcaster, travel to the Magic Realm and find one of the sages when you arrive. They are always walking around the building. They will need you to find the floating purple motes around the area for them to perform the ritual to transform your Sim into a Spellcaster.
To become a Mermaid you need to consume mermaidic kelp which you can purchase with reward points or find when collecting or fishing or cave exploring.
What if I want them to become a vampire or a wherewolf like after the sim is already made?
@timelesssims see @jpkarlsens tip that your Sim can be turned into a vampire or werewolf by another vampire or werewolf.
I don't have Vampires but I do have Werewolves. You just need a werewolf bite. Or explore the tunnels under Moonwood Mill and when you see the options pop up for what you want your Sim to do in the tunnels, choose the options that send them towards danger. There's one in particular that works which involves heading towards a growling sound. My Sim did that and left the tunnels with werebies and turned into a werewolf a few hours later. That's one way to do it if there isn't a werewolf around, if the pack leaders aren't at home.
It's the only way to do it for now since we can't change it in cas after creation.
