@Sgerzic13 Do you have OneDrive enabled and set to automatically sync the contents of Documents with cloud storage? It's possible that everything in the Sims 4 user data folder, including your saves, is being uploaded and removed from your local hard drive. When that happens, the game can't find its folder and creates a new one with no content.
The solution is to disable automatic syncing of Documents, or disable OneDrive if you don't use it at all. Here's how to change its settings:
If you happen to be on a Mac, let me know: the principle is the same, except the issue is iCloud, not OneDrive.
