Can't Set Ghost Color

Do you not see it when clicking on the ghost ?

That's correct. The option "Set Ghost Color" does not appear in the pie menu when I click on the ghost sim.

Did the option disappear for all ghosts or just a specific one ?

Okay, I think it was with Guidry. Maybe his color can't be changed? I will check some more and see

Checked some more, and it looks like I can change ghost color on ghosts I'm not playing. Example, my ghost traveled to a bar and I could change the ghost color on the bartender. However, the ghost I'm playing has no choice in the pie menu. So it's just ghosts I'm playing. Is that how it's supposed to work?
