This just started happening after the latest patch. I'm on PS5.

Same happening for me and I'm on Xbox one - I use inverted camera controls (no hate, I'm just wired that way!) and I've tried multiple game saves in different slots but nope, every single time I load my game I have to go through and change all the settings each and every time. It's driving me insane !
All updates done - I have the majority of the packs but not the new enchanted one (sorry, not my vibe)
