@blockhart93 what I would do is, before you start your game go to Manage Game and Add-ons by selecting Sims 4 on your console home screen using the menu button (3 lines) then go to your Sims 4 content (see attached) and uninstall and reinstall the game and add-ons again.
Then, before you play in future make sure all the packs are checked with a tick in the box next to them and if any boxes are not ticked, tick them again and select Save Changes for them to install again. That way you won't get that message and can safely load your game without any items being removed.
I had this problem for a while specifically with Moschino uninstalling itself. Xbox Support couldn't explain why it was happening though. But eventually it did stop unchecking itself.
