I'm afraid the issue is just the one you've already recognized in this situation. If you unlink your Xbox from one EA account and link it to the EA account that you use to play on PC, you will lose progress.
The progress you had from playing on Xbox is stored on that EA account, not the Xbox account. If/when you move the Xbox to this second EA account, it will have access to whatever progress/content is on that second EA account (whatever you'd earned on PC) - it will not copy anything from Xbox over to that account.
There is not a way to transfer progress or content between different EA accounts, sorry.
