Agree with this. I think even making them fully customizable would make sense, especially in an offline mode. I've always wished offline career/franchise modes should be a little more sandbox so the user can make it their own. If i want to give a little boost to my youth academy striker's sprint speed, then why not?
Comparably, Madden lets you. EA CFB lets you do it for auto-generated recruits. I can definitely understand not being able to edit real players within the mode. But how about allowing it for the fictional guys.
