Did you tried to clear your local saved data? Might be a corrupt save.

I have tried that as well, even tried replaying the final mission in ME1 thinking maybe that would fix it too. I've even tried the clear the local save data, then play in offline mode. None of those worked.

I have not too much knowledge about the xbox, so this is all I could offer.
