This is because your Sim has the perfectionist trait. It may be a bug that is vanishes instead of going to the inventory but the automatic retry is intended. On the plus side your Sim will soon be level 10 where masterpieces are much more common and sell for much more money. If you want them to not start painting autonomously just leave a painting on the easel until you want them to paint again. No Mods required.
