Great! So it's just the shortcut in the Dock that's broken, you can remove it - https://support.apple.com/en-gb/guide/mac-help/mh35859/mac
Now, click on your saves folder once to select it, the one that actually contains your saves, then go to File > Get Info. Under the General > Where section near the top of the info window please copy and paste the location of your saves folder here.

Ok. Open your Documents folder and you should have another Electronic Arts folder and within that a Sims 4 folder. In that Sims 4 folder will be a saves folder which should be empty. Move your most recently dated save from the EA > TS4 > saves folder on your desktop to the same location in the new saves folder then launch your game. - @Bluebellflora It worked!
