Hi, thanks for replying!
All of the saved files, mods, everything is in the documents folder and where it should be, but is still not connecting with the game for some reason. Please open Terminal and copy and paste the following command then hit Enter/Return:
find ~ -type d -name "*The Sims 4*" 2>/dev/null
After a little while it will return the results of the search. Please copy and paste the results in a post here.

This is where the game will load saves and other user data from:
/Users/NAME/Documents/Electronic Arts/The Sims 4
But you also have data here where the game will not load data from:
/Users/NAME/Documents/Dokumenter/Electronic Arts/The Sims 4
Maybe your saves are in that second location? You need to move them over to the first location.
You're also using iCloud Drive so make sure you have optimised storage disabled otherwise at some point all your data will start getting pushed to the cloud from your Mac and then none of your saves and other user content will load - https://answers.ea.com/t5/Technical-Issues-Mac/READ-FIRST-Saves-CC-Mods-or-Library-items-disappeared/m-p/10242133#M45493
