Do you have anything running that could be conflicting with the game? Any apps launching on startup like monitoring software, antivirus, streaming? Could you also post a screenshot of the speckled screen you describe?

Sorry for the delay in response.
I don't have any apps or programs that could conflict with the game. I completely restored my MacBook to its factory settings and wiped it of everything just in case it was the issue. I am completely stumped as to why Sims 4 just doesn't want to work for me :/
I've attached a couple of images of the speckled screen.

Oh that's not good. Try resetting the NVRAM on your Mac - https://support.apple.com/en-gb/HT204063
Could you open the Config.log file in your Sims 4 folder and c/p here the 10 or so lines under the === Graphics device info === section.
