After the update released on July 1st, Edith the Ghost from the Life and Death expansion pack has been replaced by a random Sim, as seen on the videos I shared.
I currently own all packs.
I noticed the problem after Edith appeared in my residential lot when watching the "static" TV channel.
After that, she was MIA.

I'm having the exact same problem on Xbox (no mods or cc). When I interact with the sim who seems to replace edith everyday, she then comes to ravenwood estate (where my sims live) and she cleans my grill and any puddles on the ground. She's swiped objects from my house too! I want edith back, she never stole from me! T-T
This is also happening to me. Edith moves away from her zone, to be replaced with a non-ghost random SIM that has all her default interactions. I'm never using mods or anything, this was a "fresh" save file.
After a while, Edith reappeared, but only for few days. Now it seems that they are sharing the "edith" role.
Ha, now I'm having 2 "Ediths" near the well! One is the real child Edith, another - just some random old lady. They both have the same animations and interactions available. The generic "possessed" lady appeared when I've already started talking to the real Edith. What a mess, ha. Thankfully, I've managed to complete the task with the real one, despite the fake new "edith" tried to interfere.
My guess: this happens when I try to reach Edith’s well through the lot closest to it — that huge mansion on the hill with the “Sacred Ground” trait. Maybe the family living there is summoning Edith through the TV, and the game generates an extra “Edith.”
I’ve also been dealing with this a little over a month now. Edith disappears and it’s just some random townie with the Edith interactions and animations. No mods, fresh save. I noticed it started when I turned on neighborhood stories. That’s also when I noticed Temperance had been added to the households list under a different name. She would still show up on my haunted lot but her name would be blank. I think something weird happens to these special “ghost” sims when neighborhood stories is active.
Hey, today I interacted with Edith. When it's morning the ghost Edith disappeared but another Sim appeared and all the interactions indicate that this Sim is actually Edith. Anyone encountered this?

I have the same problem, no mods or custom content. PC game.
relatively fresh save, only on the first generation, maybe 50 days old. this save was created only about 3 days ago on an up to date version of the game. have not installed or removed any packs since creating the save.
Edith just at some point randomly turned into a townie sim and this townie has all the Edith interactions. I have closed and reloaded the save a couple times, and am unsure of when she changed (if it was during gameplay or on reload). I have noticed the sim wandering around for quite a while (~15-20 days?) but assumed it was just a glitched townie.
I live in the old Ravenwood estate.
I had previously completed the edit/mother questline, and got the mark of Edith etc. and then sometime after that Edith disappeared.
I do not have aging on for any sim outside the active household. I have never played another household than the current one.
I started a new save file yesterday. I never play with mods or CC, so it’s a completely vanilla game. My Sim got the Mark of Edith trait from the wishing well, but the very next Sim day I noticed Edith had been replaced by an elder Sim named Juan Redman… 😬
