Console player here, having the same problem. I thought it might be caused by the fact that console was behind on an update, since that's about when I started having the problem but despite the update now arriving I'm still having the problem.
I'm a builder and so this is really frustrating, especially since I've been able to sometimes save one or two of my builds but none of the others. I don't know what to do or what caused it but I really hope they fix it soon!
