If all you did was change the e-mail of your Xbox account and didn't unlink or relink any platform accounts, then your original account should hopefully still exist with your progress, and you'd simply have to regain access to it. If you changed the e-mail of the Xbox account, logged in, and didn't find your progress, then there's a chance that you logged into the wrong Xbox account.
I'd recommend first trying to regain access to your EA account - the EA Support should be able to help you with that. After that you can check in the customer portal, which Xbox account is linked to your EA account and if that's different from the one you are currently using, you will have to use that Xbox account.
Please do not unlink any platform accounts from your EA account. Progress does not transfer over from one platform account to another. If you have already unlinked your Xbox account and relinked it to a different EA account, that would explain the loss of your progress.
I'm not sure where the PS5 that you mentioned comes into play. Did you at any point play on the PS5?
