You have a few questions here, so I'll try to break my answer up for you to keep everything clear:

1. Unlinking your Steam account isn't going to have any effect on the progress of anything else on your EA account. The problem from what I can see is that you unlinked your PlayStation from its old EA account, and since all of your game progress is stored on the EA on the EA account level, that progress would have stayed behind.
2. I don't entirely understand your second question, but I think I've answered it in the first. Unlinking your Steam isn't going to have any effect on the progress you're seeing.
3. Deleting a linked account doesn't really undo the link. If you want to unlink anything, you can do so here, but just take a note of the unlinking risks to make sure you want to do that.

If you want to recover your old PlayStation progress, your best chance would be to relink your PlayStation to its original EA account. It's not guaranteed, but there's a good chance you'll get your progress back that way.
