Hey there. I'm sorry to say, you'll have to try opening a case again. We cannot help with account issues over the EA Forums.
As far as information on account unlinking goes, you can find that here. However, since you don't know any of the information for your account, you obviously can't make any changes. An advisor will need to verify you own the account. When they do that, they should be able to update the email address to your current one.

Thank you for the reply. How do I actually talk with an advisor? And I don't "own" the EA account that is connected to my PS5. I am simply trying to get that account disconnected so that I can connect mine. I could care less about the account or the data saved to it.

We won't be able to help if you don't own the account, unfortunately. You would need to create a new PSN ID or use an existing one instead. An EA account can only have one PSN ID linked to it in its lifetime so you wouldn't be able to unlink the existing one and link a different PSN ID to the same EA account.
