I've "fixed" my issue (Xbox X shuts off completely and suddenly in the middle of a game). I bought a new series S console and it's been fine ever since. I'm not sure what's wrong with my old system, it only ever did this with FC. I know it's not the answer we were looking for but I thought I'd share anyway.
