You don't need a guide. Simply open the folders until all the files are showing. Sometimes it takes a while to load the contents on an external depending on the connection speed, memory etc.
Your Sims 4 game doesn't have access to the Documents folder, only removable drives. It needs access to the Documents folder because that is where it looks for user data. Ohhh okay i understand what you're saying now but as for the access part I'm still confused because removable volumes is the only option I have.

At some point you would have been prompted to allow the game access to the Documents folder and must have clicked deny instead of allow. Can you give the game Full Disk Access? Oh okay. Yes the game has full disk access but it still wouldn't launch. Instead of giving the error, it would load for around 30 secs and then close on its own (never fully opened). I tried reversing the symlink and doing it again but in terminal it keeps saying "file exists".

Closing before fully opening is often a Mod issue.
It will say file exists if there is a file with the same name in the location you’re moving or directing to. - @hotsaucesm
If you revoke Full Disk Access what toggle options then show up in Files & Folders for the game? I apologize for the late response but I found what cc was causing my game to crash! As for the ¨sims is already running¨ error, I have to restart my Mac and log back into origin when that happens. (also I have to make sure all the folders are open on my hard drive) Im not sure why but im glad my game is working now. Thank you so much for your help and quick responses!
