No, I do not have a backup of the save from before the horse died.
Don't think there's a solution. I'ts unclear why the horse disappeared.

To be sure, it was just the one horse and it doesn't happen on a regular basis ?
So far, it has only happened once. It hasn't occurred again because none of my horses are nearing the end of their lifespan yet. I started a new save to see if it would happen again, but it will take some time.
