I just got an EVGA 1660 ti the other day and tired to play Apex and it keeps on telling me that Apex doesn't support my graphics card though there are videos on YouTube of people doing quality tests on them

Would you mind attaching a DxDiag for us? Have you tried going to the Nvidia Control Panel (right click on your desktop) and added Apex Legends/Origin to the list of games you want Nvidia to launch the game from?
Video cards can sit on retail shelves for a while, so it's likely you need to update the video card's driver. Download the GeForce Experience so it can automatically detect the correct one for you.
