I grinded my way into getting enough "Gil" to get the 3 event packs and once I opened one pack, the other two disappeared.
WTH is going on?

The packs in your first image are not the event packs. Those are epic-level Apex Packs. These would not have any event items.
The event packs are purchased from the event screen in your second image, and as shown by the pack content description in the image, these would be the ones containing the event items.
Those epic Apex packs being opened would not add anything to the event tracker as they don't contain event items.

Having the same issue just now bought the whole event went to open one of my packs and it gave me no item form the even and just went away I did the math and I was suppose to end up with 1200 apex coins left after the event any way you guys can check how much I bought from your end should have a log or something showing how much I spent

I used the in-game gil to redeemed the current Final Fantasy Event Pack on PS4 but as I redeemed it the next match loaded. I left the match to go back to the lobby to see the gil taken for the event pack but no event pack given but it's listed as redeemed. No new items listed to show if I opened it. I have a video of the incident but can't send it here

Sorry no new item notifications popped up for that pack. That can sometimes happen if you're pulled out of the pack opening screen, but fortunately the items are still added to your collection.
Taking a look back, I'm seeing you had received the following from the pack purchased with gil:
Voidwalker Helmet Weapon Charm
Nemesis skin (Legendary)
Rampart execution
