Sorry for any concerns with this reset progress. This has less to do with Cross Progression (as that's active on all accounts, and is not something that would be delayed or reset progress at this stage) and more to do with unlinking a platform or linking one to a different EA account.
Progress is stored on the EA account level, not on individual platforms like PlayStation, Xbox, Steam, etc. This means if you link your platform to a different EA account, you'll lose access to that progress and it will appear to have reset. That looks to be the case in this situation as well.
The EA account you're currently posting with wasn't created until some point last year, and had never launched Apex on any platform until very recently. Since you've been playing for a couple years, that progress must be on a different EA account. Depending on where you purchased the currency you've mentioned, it's certainly possible the same email was used for an entirely separate account (such as a PSN account). That would get receipts from purchases through PlayStation, but wouldn't indicate whichever EA account itself was used.
I do see you mentioned having only one EA account, but there's certainly another EA account that has that progress. Linking the PSN account back to that original EA account would be the only way to try recovering that progress. From there, you'd want your Steam account linked to that EA account as well, rather than this one.
