WORKAROUND
Hi all, like you I've had this issue and I've found a workaround to get your coins that you've bought. TLDR: log onto Apex on a last-gen console - Xbox One, Xbox One S, or Xbox One X. You will get your coins, and once that's done, those coins will be visible on your Xbox Series S/X and you can continue to purchase skins and items with those coins on your Xbox Series S/X. You still won't be able to buy any coins on Xbox Series S/X though. If this was helpful to you, please upvote my solution.
Here's how I found this stuff out:
So like many of you I've bought apex coins while on my Xbox Series X. I tried buying them from within the game, from the Xbox store in the console, and I tried buying a gift code on Amazon and entering that also on my Xbox Series X. None of it worked. Then I remembered that those problems started happening with the next gen update, and obviously not EVERYONE on Xbox is complaining, so I guessed that the bulk of Xbox users who are still on last gen are probably not having any problems. I hooked up my old Xbox One X (last-gen console). This doesn't have the next-gen version of the game, only the last-gen version. After updating the console and the game (I haven't turned on the older console in a LONG time), I started up Apex and have received the coins immediately.
I am a programmer and I can tell you the bug is 100% certainly with the way the next gen version talks to its cloud back-end.
@EA_Lanna a lot of people obviously will not be able to run the game on an old gen console just to redeem the coins. There are only 6 days left in the collection event. Respawn / EA either need to make sure that this gets fixed within the next two days, or, if that fails, you need to extend the collection event for another week, so people have time to get their items. A lot of people out there don't have a lot of time to game right now (since a lot of people have to work a lot due to the pandemic / war making prices go up / whatever). Some people can only turn on the console once a week or so. Think about people who work on the road, like truck drivers, pilots, etc. You don't want to disappoint those people by making it impossible for them to buy the items they want. For this reason the event should really be extended by a week.
